My Favorite Low Carb Crock Pot Recipe

Low carb diets are becoming increasingly popular these days. As you may expect from the name, low carb diets restrict your intake of carbohydrates, substituting that instead with more protein.

For that reason, many of these recipes are centered around meat. Many cuts of meat benefit from slow cooking and stewing, which makes them perfect for low carb crock pot recipes.

Often on a low carb diet, chicken features quite heavily and I thought you might be getting bore of that by now if you’ve followed a low carb diet for a while. So here is a low carb crock pot recipe which doesn’t involve chicken of turkey:

Pork Carnitas

Ingredients

These are great, simple but tasty food that is just a little bit different from your regular burritos, salads and wraps.

You’ll need a boneless pork roast joint, and that is going to be spiced up with a tablespoon and just a little bit more of ground cumin.

You can grind your own cumin if you want to or you can buy it ready ground from the store. Just bear in mind that ground spices can’t be kept forever in the back of your store cupboard. Sure they last a while, but they do eventually lose their power and their taste. You will also want some fresh cilantro and just a little salt.

Cooking

Put your pork in your crockpot with a half a cup of water and a teaspoon of ground cumin and a half teaspoon of salt. Cook this very slowly on a low heat.

Your crockpot instructions should tell you how long to cook the meat for according to weight, but these are usually minimum times so you should check the pork every few hours.

Bear in mind that crockpot cooking is all about slow cooking so the meat is really tender, so the cooking will probably take all day but at least once the pork is in the crockpot you can leave it alone and do other things for a while.

When the pork roast is cooked, take it out of the crock pot.

Pull the meat apart with forks. It should be tender enough to almost fall apart. Throw away any excess fat and toss the meat in more ground cumin.

Add the fresh cilantro. Add salt according to your preference but don’t overdo it. Finish the cooking of the pork to cook off the spices in a non stick pan. That will dry it out and enhance the flavour of the cumin. Yummy!

Serve this delicious meat in salads or in burritos, tacos, etc. Keep the recipe low carb’ by choosing a high fiber wrap for your meat or eat it with salad. It’s great when accompanied with pickles, salsa, green onions, peppers and lettuce.

Spice your salad up with jalapenos if you wish. It’s making my mouth water just thinking of this low carb’ crock pot recipe! Pork Carnitas are one of my favourite dishes to eat and they are great for a family dinner.
