Gluten-Free Bread Recipe

These days, food allergies have become a real issue. Whether it is all the processed foods we eat, or the places we get the ingredients from; it is a problem for many people. So, when you want to bake some bread, but need it to be gluten free, there are recipes available. We’ll go over one here. This is a recipe for Banana Bread, and it is completely gluten free.

So, let us start with the ingredients.

First, you will need the following:

Get a quarter cup of quick cook oatmeal; this is where you avoid the gluten. Check the label and make sure it is the gluten free.

Then, you use four different types of flour. You’ll need half a cup of millet flour, three-quarters of a cup of tapioca flour, a cup of rice flour, and a quarter-cup of sweet rice flour.

All of these insure that you end up with bread that has no gluten.

Next on the list, a quarter-cup of almond meal; three-quarters of a cup of brown sugar, and the same amount of white sugar.

Then there’s two tablespoons of flax seed meal, two of lemon juice, and one to two teaspoons of lemon zest. You put in a varying amount depending on your personal taste.

Also, two teaspoons vanilla, two eggs, half a cup of low fat lemon yogurt, and one and a half teaspoons of xanthan gum, and the same amount of baking soda.

Finally, you’ll need three-quarters of a teaspoon of salt, one stick of melted butter, and three medium bananas. With the bananas, you’ll need to mash them up good! If you have children, they’ll probably love doing that for you!

Now, here’s an important point with the bananas – make sure that they are very ripe. You want their skins to be brown, almost black. It may look nasty to have them around, and looking like that, but it gives the best flavour to the bread. Also, very ripe bananas are much easier to mash and spread throughout the batter.

Method

So, as to the actual mixing. First, get a large loaf pan – ten by five is best, and grease it up. Next, in a medium-sized bowl, sift in all of the dry ingredients, and blend them together. Then, in a separate bowl, whisk the eggs, and then combine in the bananas, the vanilla, the yogurt, lemon juice and zest, and the melted butter.

Once all the liquid ingredients are thoroughly mixed, pour this concoction into the bowl containing the dry ingredients. Mix them together until all the dry ingredients are well moistened.

Finally, pour the batter into the pan, and then bake it in a pre-heated oven at 350 degrees. Now, typically, an hour is long enough, but temperatures vary from oven to oven; so you’ll want to check on it.

The best way to do that is to stick a fork or toothpick in the centre of the loaf. If it comes out dry, the bread is done. Also, keep an eye on the edges of the pan. If the bread starts to blacken there, even if it’s not fully cooked, reduce the temperature. When done, the recipe will yield one ten inch by five inch loaf of banana bread.
