How to Make Gluten Free Bread

Gluten is a component of wheat; as such, it naturally ends up in bread and other foods. But, some people have trouble digesting gluten. This is known as Celiac Disease. If you have celiac disease you’ll definitely want to know how to make gluten free bread

People with this health problem have to avoid any food containing gluten. If they don’t, eating a food with gluten can damage their intestines because they cannot digest it or wheat products properly.

This can result in gas, bloating or abdominal pain, chronic diarrhoea, fatigue, abnormal weight loss or gain, anaemia, cramps, itchy skin, and more. These may sound like an awful lot of symptoms, but that’s because different people generally react differently to the gluten.

You have Options

So, if you’re looking to make gluten-free bread, you have two options. You can follow a regular recipe, and then change the gluten ingredients for those that don’t contain it; or get gluten-free recipes. In general, these recipes call for the total elimination of wheat, barely and rye. Virtually every type of flour is a no-no as well. Instead, there are gluten-free options available.

Of course, with the increased demand, many regular and specialty stores now carry various gluten-free products. So, if you prefer to buy them, they’re out there. If you want to try your hand at baking your own, here’s a typical recipe you can try:

Recipe for Gluten Free Bread

Ingredients

First, there are the ingredients. You’ll need a cup of brown rice flour and 1/2 cup of gluten free oat flour, which will help to loosen the mix as gluten free bread can be a little on the firm side.

You’ll also need 3/4 cup each of millet flour and tapioca flour and 1/3 cup sweet rice flour and 1/4 flax seed meal. That might sound like a lot of flour but that is basically what bread is!

To go with this you’ll need 1/3 cup arrowroot starch and a tablespoon of Xanthan gum as a binding agent, and of course, three eggs, like in regular bread.

Then comes 1 teaspoon of apple cider vinegar, a packet of dried yeast, a cup of warm water and a teaspoon of granulated sugar to make the yeast work.

The lovely sweetness of this bread then comes from 1 tablespoon of molasses and 3 tablespoons of brown sugar.

You’ll also need 1 1/2 teaspoons of salt 4 tablespoons of butter, which has been melted.

Baking

Once you have all of these items assembled, grease 10 inch long deep baking pan or two pans each 8 inches long. Next, set your oven to 200 degrees so it heats up. Then mix together all of the dry ingredients.

Mix the melted butter, molasses, eggs and apple cider vinegar together.

Make sure the water is warm enough to make the yeast rise but not too hot so it will be killed off.

In a small bowl, stir together your yeast mix, and a teaspoon of sugar.

Next, add 1/4 cup of the heated water to the yeast mixture.

Let it sit for ten minutes. As soon as the yeast is bubbling according to the packet instructions, pour the egg mixture into the dry ingredients and then add the yeast mixture.

Slowly add the other cup of water until you achieve the right consistency; the dough should be like cake batter.

If you end up adding a little too much water, add some rice flour. Keep doing this until you get the dough to the right consistency.

At this point, put the dough in the pan, and put it in the oven to rise for an hour to an hour and a half. If you want, you can put plastic wrap or a towel over the pan.

Check on the dough; and once it’s risen to the rim of the pan, increase the temperature to 350 degrees and bake for about 40 minutes. If you have an internal thermometer, check the bread’s temperature. When it reaches 190 degrees, it’s done.
